Mention "Cajun" or "Creole," and you're likely to think of gumbo or any of the other iconic dishes that have put Louisiana on the culinary map: jambalaya, red beans and rice or the decadent crawfish etouffee.
Wanderlust runs in the family. I'm always angling for a getaway with friends and family to explore the world and to discover new foods. At home, I cook to recall our trips.
Here's an Italian-style dish that you could make anywhere because of the easy availability of the ingredients. It's also vegetarian and, without the cheese, vegan. Because it harks back to Italy, let's pair it with some California wines that use Italian-born grape varieties.
